Countdown to a #FairtradeChristmas – Day 7

Who are you?: James. My Mummy works at Bridge of Don Academy.

What is your Fairtrade product?: Fairtrade bananas, Co-op Fairtrade chocolate chips, Co-op Fairtrade dark cooking chocolate and Tate & Lyle Fairtrade caster sugar. These are all good for baking and can be purchased from the Scotstown Co-op.

Why?: When the weather is keeping you indoors and you need something to keep the children busy then you might try some baking, just like James wanted to do. Instead of picking up just any ingredients try and look out for the Fairtrade version. The banana and chocolate chip cupcakes James and his Mummy made were delicious and Fairtrade.

The recipe James used:

Ingredients (makes 18)

  • 150g self-raising flour
  • 150g Fairtrade caster sugar
  • 150g softened butter or margarine
  • 3 large free range eggs
  • 1 tsp Fairtrade vanilla extract
  • Packet of Fairtrade chocolate chips
  • 2 Fairtrade bananas
  • Half a bar of Fairtrade dark cooking chocolate


Method

  1. Preheat oven to 170°C/gas mark 3.
  2. Line a 12 hole and 6 hole muffin tray with cupcake cases.
  3. Place everything in a large mixing bowl and beat with an electric mixer until combined. The mixture should drop softly from a spoon when tapped on the side of a bowl.
  4. Divide evenly between the cupcake cases. Bake in the centre of the oven for 15-20 minutes or until golden brown and spring back lightly when pressed.
  5. Remove to a cooling rack and leave until completely cool.
  6. Melt the dark cooking chocolate.
  7. Cover with the melted dark cooking chocolate.
